Butternut Squash Soup

The perfect easy and delicious, silky texture soup will keep you warm in the cold winter evenings. It can be served for dinner or warming lunch.

 2 tbsp olive oil
 1 small white onion, diced
 2 tsp minced garlic
 1 butternut squash, peeled and cubed
 4 cups vegetable broth
 salt to taste
 pepper to taste
 thyme for garnish

Over medium heat, heat oil in a large saucepan.

Saute the already chopped onion and garlic for a few minutes in the pan.

Then add the vegetable broth, butternut squash, salt, and pepper, and leave it to start boiling. Make sure you cover your pan.

Let it boil for about 15 minutes or until butternut squash is fork-tender.

Then blend it until completely smooth with using kitchen tools like a Vitamix or a hand blender.
