Chocolate Mint Cake is a twist with a bit of mint to the classic chocolate cake, that will bring a real delight to enjoy. Mint grows all through the year and you can find it usually near water bodies. You can add flavor and additional medicinal properties to your meals, green tea, or desserts by steeping a few fresh or dried mint leaves.

 ¼ cup olive oil
 1 ¼ cups sugar
 ¼ cup melted chocolate
 ½ cup flour
 2 tbsp water
 1 tbsp flax seeds, ground
 1 tsp mint extract
 ½ tsp baking powder
 1 pinch of salt

In a bowl, mix the flax seeds with water and set aside to soak for 10 minutes.

Stir in the sugar, then incorporate the oil and melted chocolate, followed by the flour and baking powder and mint extract, as well as a pinch of salt

Grease a small cake pan with oil and pour in the chocolate batter.

Cook in a preheated oven at 350F for 30-40 minutes.
