 2 cups all purpose flour
 1 tsp baking powder
 1 cup sugar
 1 tbsp orange zest
 1 cup coconut milk
 ½ cup fresh cranberries
 1 pinch of salt

In a bowl, mix the sugar with the salt, milk and orange zest

Stir in the flour and baking powder then fold in the cranberries.

Pour this batter into a small cake pan greased with oil.

Bake in a preheated oven at 350F for 30 minutes or until golden brown or fragrant.
