This light and refreshing quinoa salad recipe is vegan and gluten-free and the perfect vegetarian meal to add to your meal plan.
For the Salad
1 cup quinoa
2 cups vegetable broth
½ diced red onion
1 can corn, rinsed
1 can black beans, rinsed
2 peppers, diced
1 jalapeno, deseeded and diced
⅓ packed cup cilantro, chopped
For the Dressing
½ cup olive oil
¼ cup lime juice
1 clove garlic, chopped
1 tsp salt
1 tsp pepper
1 tsp cumin
¼ cup chopped cilantro

Bring to a boil a large pot with quinoa and veggie broth in it.

Boil it for 15 minutes or until the quinoa is soft.

Use a large mixing bowl to prepare and mix all vegetables and cilantro.

Add in quinoa and mix it with a fork to combine.

To prepare the dressing, mix all ingredients together in another smaller mixing bowl.

Pour the dressing on top of the quinoa mixture and stir with the fork.
