This avocado corn salad is great for any season, it is easy to prepare and healthy recipe made with avocado, corn, tomato, lime juice, and fresh cilantro.
The first step is to boil the corn from the cans and then drain and rinse it.
Use a large bowl to place the drained corn and add in diced avocado, onion, and tomatoes, cilantro and jalapeno pepper.
Using a second bowl, mix together the lime juice, garlic, olive oil, salt, pepper, lime zest, and chili flakes.
Then you can add the dressing on top of the salad and mixture well until combined.
You can leave it for an hour so the flavors can mix together.
The salad tastes best if served at room temperature.
