This ultra cheesy vegan ricotta is tangy and wonderful on pizza, toast or spreads on crackers.

 1 cup almonds
 7 oz jar roasted red peppers, drained
 1 clove garlic
 3 roma tomatoes, deseeded
 ¼ cup red wine vinegar
 2 tbsp olive oil
 2 tsp salt
 2 tsp pepper
 2 tsp dried basil

Use can use either a blender or food processor and blend all ingredients in until completely smooth.
